Season the stew by adding a teaspoon of curry powder, a teaspoon of thyme, salt to taste, and seasoning cubes or powder if you prefer. Stir well to combine all the ingredients. If the stew is too thick, you can add some water or stock to achieve your desired consistency. At this stage, if you have pre-cooked or fried protein such as chicken, fish, or beef, add it to the stew and let it simmer for about 10 minutes. This allows the protein to absorb the rich flavours of the stew. Finally, taste the stew and adjust the seasoning if necessary, letting it simmer for a few more minutes to ensure all the flavours are well integrated. Once everything is ready, serve the hot, fluffy rice with a generous portion of the tomato stew either on top or on the side. The dish can be garnished with chopped parsley or green onions for an added touch of freshness. This rice and tomato stew combination is a hearty and comforting meal that can be enjoyed on its own or paired with your favourite side dishes.
